Recommended Food Pairings: A marriage between two iconic red grapes is destined to unearth a sumptuous wine and food experience. Enjoy with pan-seared wagyu eye fillet, fried tofu with spicy ginger-sesame sauce, or aged Tasmanian cheddar & lavosh.
Growing Conditions: Syrah in itself is quite unique in Tasmania despite the challenging vintage we had due to a cold, wet fruit set at the end of 2019. These particular grapes showcase its cool climate site, which is one of the reasons we chose to call it Syrah and not Shiraz – which is more synonymous with warmer climates. In the vineyard, both the Pinot Noir and Syrah vines are trained to vertical shoot position (VSP) to maximise sun exposure.
The current vintage is made up of a single parcel of destemmed Syrah grapes and a single parcel of Pinot Noir, fermented with 20% whole bunches in the ferment.
- Fruit was destemmed and cold-soaked prior to ferment
- Ferment temperatures around 30ºC
- Pump overs carried out up to 4 times a day, with malolactic barrel fermentation taking place over Spring
- 100% French oak, 21% of which were new
- Bottled with 13% alc/vol
