The fruit was sourced from premium Victorian vinayrds, to bring together a complex and well-balenced expression of Cabernet Sauvignon. Individual parcels were matured in new and aged French oak barriques for 18 months before being blended to achieve concentrated fruit character and subtle tannins giving this wine sensationnal length and cellaring potential. Patricia would have loved it.

Vineyard Region: Victoria (Bendigo 40%, Pyrenees 40%, King Valley 15%  and Yarra Valley 5%)
Wine Analysis: Alc/Vol: 14.5%
Colour: The Patricia Cabernet Sauvignon is an inky dark purple colour.
Aroma: It displays rich aromas of blackcurrant and dried herbs, while the French oak influence offers a gentle ‘cigar box lift’.
Palate: On the palate the wine has powerful dark berry fruit, spice and hints of nutmeg driven by a warm vintage. It has persistent length and is well structured with ripe flavours and a seamless elegant finish.
Peak Drinking: The Patricia Cabernet Sauvignon has already received two years bottle age to soften and integrate its characters and will continue to improve over the next 6-8 years in the cellar.

Recommended food pairings: This concentrated red wine would make a great partner to Venison Bourguignon with roasted potatoes in their jackets. It could also be enjoyed with a selection of aged cheddar cheese at the end of a meal.

Growing Conditions: The fruit was harvested in early March 2017 at a baumé level of 12.8 to 14.0.

Winemaking notes: The wine was destemmed and crushed to open top fermenters in the Kindergarten Winery. The wine spent two years in 47% new, and the balance older French oak barriques. A number of blending trials took place to produce a very intense and powerful wine from a low yielding vines. The wine was bottled with an alcohol of 14.5%. Vegan-friendly.
