Blush pink colour with delicate notes of berries; complex palate with nougat and strawberries flavours. It is drinking beautifully now and will also reward cellaring for the next 2 to 4 years.

Recommended food pairings: The perfect wine to celebrate any occasion, the Sparkling Brut Rosé is a great glass of bubbles on its own. For food, fresh prawns with a Thai sweet chili dipping sauce. You could also try a platter of light cheese with fresh strawberries. For something more substantial try pan fried ocean Salmon with a fennel, pomegranate and potato salad.
Growing Conditions: This wine is a blend of different parcels of Pinot Noir 56%, Chardonnay 33% & Pinot Meunier 11%, from cool climate vineyards. All fruit was hand picked and gently whole bunch pressed to minimise contact between the juice and the grape skins and seeds.
Winemaker: Cate Looney
Winemaking notes: 100% of the fruit underwent malolactic fermentation and after vintage the various wines were assembled and assessed. The selected blend then underwent secondary fermentation in the bottle. The wine spent 3 years on lees to add complexity and allow greater merging of aged and yeast autolysis characters. It was then disgorged, liqueured and bottled with an alcohol level of 12.5%, a pH of 3.25 and an acid level of 6.0 g/L.
