Made from 53% Pinot Noir and 47% Syrah, the Mt Dove Pinot Syrah is deep magenta in colour, combining a rich and concentrated palate with vibrant aromas of pink peppercorn, bright berries and green olive. A stunning showcase of two loved varietals from our east coast Hazards vineyard.

Food Pairings

The Mt Dove Pinot Syrah pairs beautifully with roasted duck breast served with a side of wild mushroom risotto, or a wagyu eye fillet cooked rare. For a meat-free pairing, enjoy with a grilled portobello mushroom burger topped with melted Swiss cheese, caramelised onions, and smoky chipotle mayo.

    70/30% pinot noir/syrah; 24% whole bunches; matured in 21% new French oak barrels. The pinot/syrah blend is seeing a quiet renaissance among top producers across Australia's cooler zones, and is an exciting new direction for Devil's Corner. The fine-ground pepper and powder-fine tannins of Derwent Valley syrah mesh seamlessly with a red cherry core of Hazards Vineyard pinot noir. Whole bunches and oak have been fine-tuned to let vibrant acidity and those crafted tannins draw out a long finish. Patience.

Fruit was destemmed and left to cold soak for several days prior to ferment. Ferments are run up to 30 degrees and pump overs carried out up to four times per day. Malolactic fermentation happened in barrels over Spring. We used 100% French oak, with 21% new.

Growing Conditions

The 2019 vintage posed challenges with a cool and wet fruit set, resulting in low yields for all varieties. Despite this, the small and compact bunches yielded concentrated flavours and richness. Grapes were harvested between April and mid-May 2020. The Hazards vineyard consistently produces wines with depth, intensity, vibrant colour, and rich flavour.
