Growing Conditions: Predominantly from our Hazards vineyard located on the East coast of Tasmania. The 2020 vintage was low yielding, providing excellent small compact bunches with loads of flavour.
Winemaker: Tom Wallace
Winemaking notes: The fruit was harvested and loaded directly to the press with initial oxidative handling to achieve a vibrant white wine colour and avoid any pink hues. It was then racked and fermented in tank under protective conditions and cool temperature to preserve aromatic qualities. There was also a small amount of partial lees contact and stirring in tank to aid in mouth feel and complexity. It was bottled with an alcohol of 12.5% a T.A. of 6.9g/l and a pH of 3.3.
